    • Ingredients:
      • 2 Tbs Extra Virgin Olive Oil
      • 1 yellow onion, diced

      • 12 oz unpeeled red potatoes, diced
      • 2½ cups coconut milk
      • 1/3 cup flour

      1. Heat the EVOO in a large pot. Add the onion and sauté until tender (about 5 minutes).
      2. Stir in the broth, Herbes de Provence, and potatoes; bring to a boil. Simmer for 30 minutes.
      3. In a medium bowl, whisk together coconut milk and flour. Add this mixture along with the Cannellini beans to the simmering broth.
      4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
